Café de France
The Café de France serves our guests on the terrace along the ramparts or in a new dining room that has been completely redesigned with an authentic and functional/industrial decor.
The Chef, Christophe BOLIS, went back to his roots by returning to the small Provençal village of Caderousse seven years ago.
From his native region, with origins in a “southern” Provence - Corsica - he has kept the taste for authentic ingredients,
the aroma of flowers, herbs, tasty vegetables, strong meat - all from a region that is familiar and respected there. In his cooking, he is perpetuating this natural tradition for real and simple things.
The Chef can prepare fish with delicacy, his presentations are refined, his desserts surprising and delicious, like the Pavlova, an old-fashioned and aristocratic dessert that is hard to find today.
